Solera
A solera is a Spanish system for aging and slow blending of Sherries in barrels. It is also known as fractional blending. Newer vintages are blended into the system periodically, as some of the aged wine is removed for bottling. Solera wines are quite consistent year after year because of the blending of many different vintages together and because, at equilibrium, as much new wine is added as old wine is removed each year. The method is employed in a variety of beverages including non-sherry wines, whiskey, and rum.
