Erin Lee
Few Spirits
Distiller
Erin has always been a creative dreamer and taste-curious individual. After a whistle-stop trip to Asia, Erin discovered a profound appreciation for tea. She became a Certified TAC Tea Sommelier in 2021 and realised how much she enjoyed the tasting process.
This led to a deep dive into another beverage where taste can be so multi-faceted—whiskey. Before long, Erin was selected to become a part of the inaugural class of STEP UP Interns, The American Craft Spirits Association’s training program to diversify the spirits & distilling industry.
Erin has trained at distilleries all over America including Westward Whiskey, Eight Oaks Distilling, Cascade Hollow Distilling, Bulleit Distilling and Stitzel Weller, as well as at a major distributor. Upon graduation, Erin joined the team at Few Spirits in 2023 and has recently been named Head Distiller.
Erin is a life-long learner and thanks to a scholarship from the Michael James Jackson Foundation, she is currently pursuing her General Certificate in Distillation from the Institute of Brewing and Distilling.
