About Cellar Selections

Cellar Selection is a designation for wines or beers that our tasting panels feel will improve with proper aging in climate-controlled conditions, like a wine cellar or basement. 

For a red wine, is usually because its tannins are too firm or coarse at present, however there are enough flavor and structural elements to emerge and refine over time as the tannins precipitate out of the wine and settle as sediment.  For white wines, sugar and acidity are the key factors and many substantial dessert and sparkling wines, like Eisweins, Sauternes, and Champagnes, can benefit from aging—their flavors becoming more integrated and secondary or tertiary nutty, yeast-driven flavors emerging. Certain higher-acid white wines like Rieslings and Gruner Veltliners can also develop many interesting age-induced characteristics, in particular an amplification of mineral and “diesel” notes.
