Tokubetsu Junmai Sake literally translates to "special pure rice". This type of sake follows the production rules for Junmai (sake made from water, koji, yeast, rice, and nothing more) but uses a production method that is special in some way. Examples of what might give a sake a Tokubetsu designation include the utilization of a special rice variety or milling level. Though Tokubetsu has no official or legal meaning, typically Tokubetsu Junmai Sakes are of very high quality and offer a unique experience to the sake enthusiast.
