Light yellow straw color. Aromas and flavors of tropical fruit custard with blueberries, guanabana sorbet, aloe, and honey goat cheese with a round, bright, dry medium-to-full body and a tingling, involved, medium-long finish with notes of sweet potato pie, tart kiwi, panna cotta with mixed berries, and coconut. A creamy, almost dessert like Sake with the aromas and flavors of custard and fruit.

Genshu literally means “cask strength”, and is used to describe sake that has not been diluted. All saké is fermented at 20% alcohol and most have distilled water added to lower the alcohol content to 14-16%. Genshu saké is very full bodied/flavored and should be paired with dishes that are similarly robust in nature.
