Golden straw color. Attractive aromas and flavors of strawberry shortcake, apple-quince tart with cream, warm hazelnut pralines, and puff pastry with a satiny, vibrant, finely carbonated, dry-yet-fruity medium-to-full body and a tingling, refreshing, medium-long finish revealing nuances of candied lemon and clementine peels, apple granita, honey roasted nuts, and chalkboard with no oak flavor. A very crisp, yet round Champagne with lovely, tingling, mouthwatering acidity that will make this an ideal pairing with any cuisine.

Blanc de Blancs, literally "white from white" refers to a Champagne that is made with only white grapes. For Champagne that white grape is exclusively Chardonnay. Blanc de Blancs also pair beautifully with many types of seafood, from grouper to tilapia.

As Chardonnay grown in the Champagne region has such naturally high acidity, the common thinking is that a Blanc de Blancs Champagne ages better than most other Champagnes, although its aging potential depends on numerous factors, including vine age, depth of fruit and cellar practices.
