Aromas and flavors of well water, peach, yellow apple, and dried pineapple with a satiny, lively, spritzy, dry medium body and a tingling, refreshing, medium-length finish that exhibits notes of dried orange, dole fruit cup, chewable aspirin, and canned peaches. When you expect this as the cold hardy Chi-berian sparkling wine that it is, this is a good choice for a frosty morning tailgate at Camp Randall, Soldier Field or up in Minnesota.

Demi-Sec, literally "half-dry" is a term used in Champagne. Although called half-dry, a demi-sec Champagne is medium sweet, as it is legally defined as having between 33 to 50 grams of residual sugar. Thus a demi-sec is too sweet for the dinner table, but works well with pastries and cakes.

Once popular, it has declined in sales, as consumers prefer drier Champagnes.
