Clear color. Aromas and flavors of pickled cucumber, pickled asparagus and mushrooms, lemongrass and spearmint, and lightly sautéed water chestnuts with a velvety, lively, dry medium body and a tingling, complex, medium-length finish that shows nuances of cucumber water with lemon juice, hearts of palm and lime juice, pickled vegetables dipped in sour cream with chives, steamed artichoke hearts, with white flowers, and and mint. Light and refreshing mixed spring greens and herbs but then all of them pickled; a wonderfully refreshing aperitif to prep the palate for a salad or veggie course.
