Clear gold color. Malty, toasty aromas and flavors of green tea and clove, dried green apple, wheat grass, dates, and toffee, and mint with a satiny, shy, bone-dry light body and a hot, brisk finish with accents of chinese 5 spice, vanilla, cocoa powder, brioche, white pepper, and grilled cedar planks. A slightly sweeter style of Irish Whiskey, warm and complex for winter cocktails.

It can be blended with Single Pot Still Irish Whiskey, allowing for any combination of the three to fall under the category. Any grains may be used, as well as it may be distilled in pot and/or column stills, and it may be made at a single distillery or multiple distilleries.
