Pedro Ximenez sherry is a relatively uncommon type of sherry that is becoming rarer and rarer. It is made from the eponymous grape, which represents less than 5% of the plantings in the Jerez region where sherry is made. To make this sherry, the grapes are left out in the sun for two weeks to dry; during this time, they shrivel and pick up extra natural sugar. These sherries have an oxidative quality to them and are appealing upon release, but can age for a decade or two, at which time they display flavors of toffee, chocolate, and dates. They are marvelous at dessert time with almond cookies, a simple almond torte or poured over vanilla ice cream.
