Pale steely orange color. Aromas and flavors of croissant sandwich, toffee, crushed nuts, ginger, and hints of mustard with a round, soft, finely carbonated, dryish light-to-medium body and a smooth, relaxed finish imparting shades of toast and stone with a suggestion of oak flavor. A fun, rounded toasty sparkler to pair with cheeses.

Blanc de Noirs is a term used for sparkling wine that means "white from red." In Champagne, a Blanc de Noirs is made from red grapes exclusively (Pinot Noir and/or Pinot Meunier); there is no skin contact, so a Blanc de Noirs Champagne has just a trace or blush of color.

Blanc de Noirs for other sparkling wines, such as those produced in California, must contain red grapes, but white grapes are allowed. These wines do have some copper or salmon color to them.

As a Blanc de Noirs will contain all or some red varieties in the finished cuvée, these can be paired with main courses, especially duck, game birds or veal.
