Golden amber color. Aromas and flavors of mesquite wood and eucalyptus, cooked cherries and raspberry, savory grilled meat, and praline with a satiny, bright, medium body and a tingling, interesting, long finish that shows suggestions of rye pepper and savory teriyaki, al pastor pork fat and pineapple, lemon verbena, and milk chocolate. A summer Whisky to serve with a slight chill while smoking a mild cigar and grilling meat.

Although not a huge industry, there are more than a dozen makers of Australian whisky, with most of them located on the island of Tasmania. Quality is quite high, especially for the versions aged in small French oak barrels for more than 12 years. There are various styles of Australian whiskey, both blended as well as single malt.

Australian whiskeys are generally smooth, without the peatiness or tang of Scotch whiskys. Flavor profiles range from notes of honey, forest herbs and golden raisin to cedar and chestnut. These are generally whiskies for sipping.
