Bacanora is a Mexican agave spirit from Sonora, protected by its own Denomination of Origin. It is made from 100% Agave angustifolia Haw, using agave grown or collected within the Bacanora Denomination of Origin area, then cooked, fermented, distilled, and bottled under the requirements of Mexico’s Bacanora standard. Unlike tequila, which is tied to blue agave, and unlike mezcal as a broader regulatory category, Bacanora is defined by its Sonoran origin and by the use of this single agave species.

Traditionally produced in small Sonoran vinatas, Bacanora is often associated with roasted agave, desert herbs, pepper, mineral, earth, smoke, and fruit tones, though individual examples vary widely by producer, agave source, cooking method, fermentation, distillation, and aging. Blanco Bacanora is unaged, preserving the clear appearance and fresh agave character of the spirit; other recognized styles include joven or oro, reposado, and añejo.

Bacanora can be served neat in a copita to highlight its regional character, over ice, or in cocktails where its savory, herbal, smoky, and mineral notes can stand in for tequila or mezcal. Its best examples offer a distinctive expression of Sonora’s dry, mountainous desert terroir rather than simply functioning as a sub-style of mezcal.
