About Cellar Selections

Cellar Selection is a designation for wines or beers that our tasting panels feel will improve with proper aging in climate-controlled conditions, like a wine cellar or basement. 

For beers, the Cellar Selection is given for bottle-conditioned beers whose high complexity and maltiness will integrate and mellow with six-months-to-two-years of cellaring in a refrigerator or cool basement. In particular, many imperial or “extreme beers” with highly elevated hop and malt levels can round out nicely with exaggerated hoppiness receding into a more balanced, savorable flavor profile.

Baked aromas of dried fruit, apricot studded challah, roasted nuts, and apple butter with a velvety, bright, spritzy, off-dry medium-to-full body and a warming, stimulating, medium-long malabar pepper, toasted chocolate muffin, and cream cheese frosting finish. A rich and smooth Eisbock for the winter months; warms one to the bone.
