Chablis is a region of Burgundy that mainly produces oaked and unoaked Chardonnay-based wines known for their steely, concentrated, rich, and ageable character. The grapes in this region grow in a unique soil known as "Kimmeridgean" that is rich in limestone, clay, and millions of fossilized oyster shells that are said to impart a flinty flavor to the wine.
