Heritage ciders are those made from heirloom and cider variety apples. These varieties are called sharps, sharp-sweets, bittersharps, and bittersweets. While these types of apples typically don't make for great snacking, their acidity and tannin content make for great cider. Heritage ciders can be both sweet or dry, and often have a wine-like flavor profile. Sugar and acid are often in harmonious balance, and there typically a slight astringency due to the tannic nature of the apples. Seek out these ciders and discover complex, traditional flavor profiles.
