Aromas and flavors of heirloom apple, white asparagus, lily, and grapefruit jelly with a satiny, crisp, dryish light body and a smooth, easy finish evoking notes of white grapefruit on Greek yogurt with no oak flavor. Sancerre is a wine from the Loire Valley of France. While there are rosé and red versions made (both from Pinot Noir), Sancerre is most commonly produced as a dry white wine, made entirely from the Sauvignon Blanc grape.

Sancerre is one of the reference points for Sauvignon Blanc - it is that famous. Medium-bodied to medium-full, very dry with lively acidity, Sancerre is a richly flavored white with notes of melon, citrus, pears and gooseberries; it generally has a long, complex finish with a distinct note of minerality or chalk.

Sancerre is made in unoaked and oaked-versions; while the wines are enjoyable upon release, the best examples need time to display all their complexities; five to seven years is an optimum time to enjoyment, while examples from the best sites are capable of aging for more than a decade.

Sancerre is an assertive, dynamic white wine with great finesse. Pair with goat cheese or strongly flavored seafood.
