96 • Tatsuriki "Kome-no-Sasayaki" Daiginjo Sake $35/720ml.
Nickel with a pale straw cast. Green apple cider, lemon meringue pie, pepper, and anise cookie dust aromas follow through on a round, buoyant entry to a supple, fruity-yet-dry full body with layers of honeyed nuts, delicate spice, and Asian pear flavors. Finishes with a long, fruity, peppery spice, bamboo shoot, and anise fade. A powerfully delicious, yet elegant sake to enjoy with the finest teriyaki dishes. (tasted on Dec-16-2008)
94 • Ninki-Ichi Daiginjo Sake $120/720ml.
Pale straw with a silvery cast. Asian pear, honeycomb, and delicate anise aromas are classic and well proportioned and follow through on a satiny entry to a fruity-yet-dry medium-full body with great depth and integration. Finishes with a long, peppery spice and honey pear fade. A delicious sipper that is the perfect foil for spicy maki rolls. (tasted on Dec-16-2008)
93 • Muromachi Shuzo 2008 Kiwami-Daiginjo "Muromachi Jidai" Sake $48/720 ml.
Pale platinum straw color. Bright aromas of citrus blossoms, marzipan, and ripe Asian pear and kiwi follow through on a silky, supple entry to a fruity-yet-dry medium body with baklava and spiced poached apple and pear, and super ripe melon accents. Finishes with a long, elegant fruit and peppery spice fade. (tasted on Dec-11-2008)
92 • Shichiken "Begin Begin" 3 Years Aged Koshu Daiginjo Sake $90/720ml.
Clear with a faint straw silver cast. Ripe perfumed Asian pear and delicate anise aromas follow through on a round, silky entry to a dry-yet-fruity light-to-medium body with a touch of honeyed nougat and a long, delicately peppery, mineral and apple skin accented finish. Very nice. (tasted on Dec-17-2008)
91 • Hananomai "Hidukuri" Daiginjo Sake $40.
Pale silvery color with a faint straw cast. Shy pepper, peach yogurt, and nut oil aromas display a hint of acetone. A silky entry leads to a delicate, dryish light-to-medium body with apple skin, toasted nuts, and pear pie crust flavors. Finishes with long radiating fade. (tasted on Dec-11-2008)
90 • Okunomatsu "Shizuku Juhachidai Ihei" Daiginjo Sake $120/720ml.
Bright golden yellow color. Aromas of toasted marshmallows, bamboo and daikon follow through on a supple, soft entry to dryish medium body with vanilla bean and baked apple notes. Finishes with a dried apple, caramelized nut and mineral fade. (tasted on Dec-17-2008)

Platinum straw color. Rich aromas nutty white toffee, fresh meringue, and baked apple follow through on a round entry to a dryish, oily medium-to-full body with nutskin and coconut milk notes. Finishes with a delicately spicy, rice paper, and jicama accented fade. (tasted on Dec-11-2008)
