Tasted Neat: Pale electric blue color. Anise cookie and spicy egg nog aromas follows through to a hot, off-dry full body with an astringent, lightly tannic herb, wintergreen, and chamomile fade. Great complexity and vibrancy.
Tasted as a Modern Czech Absinthe Cocktail: Cloudy aquamarine color. Anise, wormwood tea with cream, and metallic mineral aromas. A silky, smooth entry leads to a off-dry medium-full body of egg nog, wintermint, toasted marshmallow, and anise cookie flavors with a long, talc-accented fade. Rich dimensional aromas of anise, five spice, sweet herbs, and spicy meringue and follow through on a broad, vibrant entry to a lightly sweet and bitter full body with a superb balance of anise, herbs and an underlying creaminess. Finishes with a long lemongrass, aniseed, and bitter wormwood fade. Brilliantly crafted and balanced even at full strength.
Tasted louched as an absinthe cocktail: Hazy peridot color. Rounded, more emphasis on the herbal, pleasingly bitter wormwood, earthy dried herb, and crushed aniseed notes. A very seriously poised and wondrous digestif. (tasted on Aug-01-2008) |

Powerful aromas of fennel, mint leaf, peppery spice and custard follow through with great intensity to a dryish full body with prominent herbal bark, wormwood, hay, and dusty anise seed notes. Finishes with a long, drying wormwood, and fennel stalk fade with wheat flour like tannins. Louches to a translucent green haze with all of the anise and herbal flavors and a fine, and more liqueur like balance and great length. An excellent traditional European style, digestif absinthe. Finishes with a long, mint leaf and aniseed husk fade.

Tasted as a Traditional French Absinthe Cocktail: Hazy green topaz color. Licorice, cinnamon and dried citrus and sour cherry aromas. Sound supple entry. Full bodied. Licorice, cinnamon bark, straw, white pepper, and cream flavors with an intense tongue numbing effect that is strangely not hot, but anesthetizing. Intriguing and a bit "other worldly". Tasted louched as an absinthe cocktail: Milky white pearl color with a blue cast. Nutty and herbal wormwood notes mesh on the nose with the anise. The palate smoothes out and becomes more even and integrated. Finishes with a touch of mint and metal ore in addition to anise and wormwood. A rich, balanced, and sophisticated cocktail. Finishes with a long, anise, herb, and wet chalk fade. Louches to a translucent hazy green dust storm in a glass where more woodsy, wormwood notes rise and the texture smoothes out with dusty black licorice notes. Very pleasant as a cocktail.
