Golden straw color. Attractive, savory aromas of marcona almonds with sea salt, dense bread, and salt preserved lemon with a round, racy, dry medium body and a tingling, medium-long fallen apple, burre blanc, cinnamon stick, and coconut flesh finish with well-integrated tannins and a suggestion of oak flavor. A nicely salty Fino for hors d’ouevres.

A fino sherry is a fortified wine produced in Jerez, Spain. It is dry and is produced with the Palomino grape; like most sherries, it is made in contact with a flor yeast. It is made according to the solera system, in which older and younger barrels are used; as evaporation takes place over time, the older barrels are topped up with wine from the younger barrels.

Fino sherry must be aged for a minimum of two years, although most versions are aged longer. Dry and delicate, pair Fino sherry with such foods as lighter seafood, sushi or cream-based or mushroom soups.
