Nama-Chozo Sake is a style of sake that only undergoes one round of pasteurization. While some styles of sake do not go through any pasteurization at all (Nama or Nama-Zake), many go through two rounds: one round just after pressing and before storage, the other just prior to bottling and shipping. Nama-Chozo only undergoes the second round of pasteurization, meaning it is only heat-treated just before being bottled. Until this time, it is left to mature at low temperatures, maintaining a fresh and lively flavor and aroma palate. Best kept refrigerated!
