Minutely hazy golden yellow color. Rustic, funky aromas and flavors of stinky cheese and socks, dried lemons, and straw and moss with a supple, racy, effervescent, sour light-to-medium body and a tingling, elegant, long lemon vinaigrette, crabapple, nuts, and bitter greens finish. An appetizing, mouthwatering beer for the table.

They are tart tasting beers that have been inoculated with either Lactobacillus, Brettanomyces, and Pediococcus strains of bacteria or have been affected by wild yeast strains via spontaneous fermentation, or by the addition of fruits containing wild strains on their skins.
