Bright pale golden yellow color. Bright, interesting, umami aromas of marinated artichoke hearts and mushrooms, kumquat vinaigrette on a pear salad, edible flowers and grass, and hint of boiled potato with a silky, crisp, spritzy, off-dry light-to-medium body and a tingling, compelling, medium-length dried pear, raisins, honeyed nuts, and cilantro and grass finish. A nice balance of fruit and acidity makes this a very pairable perry.

The perry/poire tradition is very similar to apple cider tradition. Running parallel to its better-known cousin, pears make for a subtler and more nuanced fruit beverage. Ideally, look for true pear flavors, not sweet, nor cloying. Dryness and minerality are a plus and carbonation level is at the discretion of the producer.
