Hazy yellow straw color. Aromas and flavors of reduced lemon, honeyed quince, marinated artichoke hearts, and boiled potato with a supple, puckering, effervescent, sourish medium body and a tingling, engaging, medium-long finish with impressions of pickled turnip and rutabaga and lemon-nectarine relish finish. A nice balance of fruit and savory vegetable flavors bound by tart acidity keeps this lively and interesting; only sour enthusiasts need apply.

Wild Ale

Wild Ales, are top-fermenting beers that are exposed to 'wild' yeast or bacteria, typically Brettanomyces, Pediococcus or Lactobacillus. Highly sour, funky, 'rustic', and controversial flavors like lemon seeds, barnyard, and horse blanket, to name but a few, are the result of these unpredictable interactions. These beers certainly fall into the 'acquired taste' category, but despite their challenges, often make interesting and unique food and cheese pairings.
