Madeira is a rich fortified wine from a Portuguese Island of the same name. These wines come in a range of styles and are unique in their production process, "Maderization," in which the wine's temperature is either allowed to rise on its own or is raised by heated tanks to create a cooked effect. Wines are then oxidized through their aging process. This heating and oxidation allows for a remarkably shelf-stable product with endless aging possibilities.
