Bold umami aromas of sautéed shittakes, hard cheese rind, and coconut meat follow through on a soft, round entry to a dryish medium body with good depth and a starfruit, jicama, and honey roasted almond accented finish. A savory, sake that will pair fantastically with teriyaki and tempura. (tasted on Jun-15-2010)

Clear with a silvery green cast. Aromas of Asian pear, tapioca pudding, and star anise follow through on a supple entry to a dry-yet-fruity, vinous medium-to-full body with great depth and balance. Finishes with a nougat, jicama, and sweet rice cracker accented fade. A tasty and well crafted sake for sipping or food. (tasted on Jun-15-2010)

Very pale straw green color. Aromas of tapioca powder, white toffee, and banana cake follow through on a soft, creamy entry to a dry-yet-fruity medium-full body with toasty almond nougat and caramelized pear notes. Finishes with a peppery radish and dusty mineral accented fade that serves to balance the more confected notes. (tasted on Jun-15-2010)

Floral aromas of peach danish, honeysuckle, and spicy poached apple follow through on a soft, silky entry to a dryish medium body with notes of wet rice dough and toasted pistachio.
