Clear. Creamy nougat, baked banana and poached apple aromas follow through on a soft, silky entry to a glycerous dry-yet-fruity light-to-medium body with vanilla and spice undertones. Finishes with a long, mossy stone, nutskin, and peppery spice fade. Nice combination of complexity, smoothness, and vibrancy. (tasted on Dec-03-2009)

Clear. Bright Anjou pear skin, pineapple, and star anise aromas follow through on a fresh, lively entry to a fruity light-to-medium body with spicy apple sauce, bubblegum dust and creamy vanilla undertones. Finishes with a long, fruity fade with a touch of drying jicama and melon rind astringency. Very tasty. (tasted on Dec-03-2009)

Clear with A very faint platinum straw cast. Aromas of toasted chestnuts, almond paste and poached apples follow through on a round, supple entry to a dry-yet-fruity medium body with nice viscosity and depth. Finishes with a touch of dusty pear skin, rice paper, and pepper. Nicely made and styled. (tasted on Dec-15-2009)

Clear with a faint silver blue cast. Mild aromas of jicama, apple, and toasted nuts follow through on a round, buoyant entry to a dry-yet-fruity medium body with lively acidity and touch of pepper and radish on the finish zesty finish. Will pair nicely with eel sushi. (tasted on Dec-03-2009)
85 • Watanabe Sake Brewing Co. 2009 "Hida No Tambo" Junmai Sake $9/720ml.
Clear. Mild aromas of anise, rice flour, and apple yogurt follow through on a soft entry to a dryish light-to-medium body with good depth and praline and mild radish notes on the peppery finish. A nice all purpose sake. (tasted on Dec-03-2009)

Clear with a polished silver cast. Somewhat sour aromas of bruised caramel apple, dried lemon and lavender follow through on a brisk, soft entry to a dry-yet-fruity light body with hints of apple custard, jicama and nutskin. Finishes with a crisp, lightly tannic fade. (tasted on Dec-15-2009)
