Pale silvery color with a faint straw green cast with persistent bubbles. Melted buttery peanut brittle and apple pie aromas follow through on a lightly frothy entry to a dryish medium body with dried apple, honeyed nut and alka seltzer flavors. Finishes a tingly peppery radish and nougat fade. Curious. (tasted on Dec-16-2008)
83 • Mizbasho "Nigori" Sparkling Sake $50/720ml.
Cloudy moonstone color. Wet rice pastry dough, peanut butter, and baked pear aromas have a papery edge and follow through on a round, effervescent entry to a dry-yet-fruity medium body with nougat, chalk, and radish notes. Finishes with a chewy cream cheese danish, nutskin, pepper and talc fade. Pair with cheese crepes or Dover sole. (tasted on Dec-16-2008)
81 • Okunomatsu 2008 Junmai-Daiginjo Sparkling Sake $5.50/300 ml.
Opalescent color with a persistent mousse, Glue and blackjack gum aromas follow through on a brisk entry to a sweet light-to-medium body with citrus jello, baking soda and green bamboo notes. Finishes with a quick, nougat and dusty mineral fade. Confusing and confused. (tasted on Dec-16-2008)

Pale silvery straw color with a fine rim of mousse. Buttery cashew brittle, overripe apple, dried lavender, and curdled cream aromas follow through on a brisk, slightly effervescent to a dry-yet-fruity light-to-medium body with apple phosphate and lemon sorbet flavors and a quick, powdery talc and balsa wood fade. Strange. (tasted on Dec-16-2008)
