Amontillado Sherry is a fortified wine from Spain. It is a specific type of sherry, either a Fino or Manzanilla that started aging under a flor years for the first several years (up to eight) and then aged further without flor. Usually the flor is killed off by fortifying the wine to 17% to 18%.

An Amontillado has a darker color is is slightly richer than a Fino; serve with slightly richer foods, such as beef sausage, paté or rich cheeses.
