Ice wine is Canada's most famous white, but there are many other whites produced in the country that are of excellent quality. The main area for these wines is the Niagara Peninsula, while the Okanagan Peninsula in British Columbia is also a fine area for whites. As Canada is a cool climate, varieties such as Pinot Gris, Riesling and Gewürztraminer excel, while Chardonnay is also a noted variety; there are also some very good blends of Pinot Grigio and Chardonnay.

Generally, these are aromatic whites, not aged in wood and have good natural acidity. The best examples can drink well for five to seven years; pair most of these wines with an array of foods, from risotto to sautéed chicken, pork, lighter seafood or fusion cuisine.
