Stepping Up Your Game

So you got a bag of chips a colorful taco dip that you picked up at the checkout line and think you’re ready for Super Bowl 51? Nope.

Not so fast, don’t you think a game this huge deserves something more? Let me be honest, I didn’t even know who was playing in this year’s Super Bowl but I’ve been invited to many Super Bowl parties and by the end of the game, I’m a fan.

Each year I struggle with the many unhealthy choices at the buffet of chicken wings, fried chicken tenders and pizza but what about stepping up 'your game' and trying healthier versions of go-to Super Bowl snacks?

Baked Doritos Crusted Chicken Tenders

I'm a food hacker of sorts, I taste something, I deconstruct the dish and then try to figure out ways to make it taste the same but healthier and in as few steps as possible. This one may sound a little crazy, but it's a little healthier than fried wings an tastes great.

1 bag of Cool Ranch Doritos
12 Chicken Tenders
1 cup of Buttermilk (I know, trust me you won't taste it)
½ cup of Flour
2 eggs and ¼ cup of Buttermilk
¾ cup of Bread Crumbs
1 bottle of Buttermilk Ranch dip
Salt and Pepper, to taste
Pam Olive Oil spray
Parchment paper
Sheet tray

1. Start out by soaking your seasoned (salt and pepper) chicken tenders in the cup of buttermilk the night before in a plastic bowl covered with plastic. The Lactic Acid and Enzymes in the milk with help tenderize your chicken. If you don't have the time to do it overnight then soak for as long as possible. You can also cut up whole chicken breast into small bite size pieces.
2. Toss around the bag of Doritos to get pumped for the game or just crush the chips in the bag by opening the bag and squeezing until the size of peas (no peas in this recipe).
3. Season the flour, beat the eggs with fresh buttermilk
4. You're ready to start breading; remove your chicken from the buttermilk and drain as much as possible.
5. Dust the chicken with flour and then drop into the egg mixture and remove one at a time and coat your chicken with the crushed Doritos. In advance line your sheet tray with parchment paper and spray with Pam (Olive Oil) and place the breaded chicken tenders lined up on the sheet and repeat until finished.
6. Preheat your oven at 375 and cook chicken for 25 minutes or until done (internal temp of chicken should be 165 degrees). If you cut up your chicken into bite size pieces you will only need to cook for 15 minutes.
7. If you're looking for a pop of color put a few drops of food coloring into the Ranch Dip to support your favorite team.




Cauliflower Crusted Pizza

An event healthier twist on a football fan favorite, pizza. Again, this might sound a little odd, but its really good. Make sure to serve on a plate.

1 head of Cauliflower
1 Egg
1.5 cups of Grated Mozzarella Cheese
1 cup of Grated Parmesan Cheese
1 Tbsp of Chopped Garlic
1 Jar of your favorite Marinara
Fresh Chopped Basil for garnish
Salt and Pepper to taste
Sheet Tray with Parchment Paper
Pam Olive Oil Spray

1. Clean your Cauliflower by removing the stem: grate your Cauliflower and place in a bowl. Heat your over to 375.
2. Add your egg, garlic, salt and pepper and mix until nicely combined.
3. Spread your mixture on the lined sheet tray and cook your Cauliflower for 30 minutes. If it starts to brown on the outside border mix and spread evenly.
4. Remove your Cauliflower and let cool, once it's cool put in bowl and add 1 cup of Mozzarella and 1 cup of Parmesan Cheese.
5. Add a clean sheet of Parchment on the sheet tray and spray and then take your mixture and form the Cauliflower mixture in a round shape try to flatten it as if a thin crust pizza.
6. Put back in the over for another 20 minutes and then remove and add your sauce and ½ cup of Mozzarella Cheese and sprinkle your chopped basil for garnish.
7. Put back in the over until the cheese melts and the outside crust is brown (another 10-15 minutes).
8. Now you're ready to enjoy Super Bowl 50!!

Now, it's not going to be exactly like a think crust pizza but it's delicious and you'll enjoy without the guilt.

As a fun display for 'your playing field' pick up a piece of inside/outside carpet and use for your tablecloth for your healthy and delicious touchdown!
