Brilliant yellow straw color. Rustic, yeasty aromas and flavors of barn hay and horse blanket, schmaltz and romano cheese crisp, dried apple with honeycomb, and brewer’s yeast in a pewter bowl with a supple, tart, effervescent, bone-dry medium body and an interesting, medium-length finish manifesting notes of arugula and grass, baked apple core and lemon rind, and gravel road finish. A vinous and wild heritage cider for connoisseurs; serve in a champagne flute.
